Mango urugai:
Recipe by: Sri:mathi Ma:dhuri Mo:han, denver USA.

Ingredients:

- 2 mangoes (medium sized)
- chilli powder (4 tea spoons)
- salt (4 tea spoons)
- Menthi powder (1/2 - 3/4 spoon fenugreek powder)

turmeric, 1/2 spoon
- Sesame (nuvvulu) Oil (5 spoons)
Popu: - Mustard seeds, ingua, karvepaku
 
Procedure:
Cut the mangoes into very small pieces.
Over the cut magoes, put the chilli powder,  turmeric powder, salt, menthi powder. (Donot mix - yet).
Take the sesame oil and when its warm enough, put the popu in it. When the mustard-seeds splits, pour the hot oil over the mangoes...Due the hot oil, the raw smell of the chilli powder,turmeric powder, and menthi powder is removed. Now mix all of them well..
Done :)
The pickle will taste  the best, when left like this, for atleast 1.5 days.
