Ingredients:

  1. Rice – 1 cup
  2. Milk – 4 litters
  3. Cardamom powder – a small pinch
  4. Nut meg (Myristica Fragrans) powder  – a small pinch
  5. Nutmeg leaves (myristica Officinalis) powder – a small pinch
  6. Saffron – 1gram (in 1 tablespoon boiled hot milk immerse this saffron and make it dissolve completely)
  7. Ghee – 1 cup
  8. Crushed Jaggery – 1.5 cup or Suger candy (kalkkandu)-  1.5 cup

Procedure:

In a thick based pan add 2 table spoon of ghee and fry the rice to golden brown in a low flame. Add enough water and cook the rice. Add the milk and mix well and start boiling it until the rice is over cooked. Do not forget to keep on ladling. Add jaggery or sugar candy and ladle it until the entire mixture becomes thick, while it is getting thickened add the remaining ghee so that it clearly gets mixed well into the akkaravadisal. Finally add Cardamom, nutmeg podwer, nutmeg leave powder and saffron mix well. The amount of milk can vary from 0.5 litters to 5-6 litters. In srivilliputhur for 1 kg rice they usually add 60-70 litters of milk.
